I doubled the recipe and made it for my family. They loved it! The sauce is so good! Next time I will have to triple it because the kids kept wanting more. The only thing I’d change is the couscous because some weren’t too big on it. I may make it with rice next time, but this is going to definitely make it into our regular dinner rotation.
When assembling the items to use for the chili lime sauce, I realized I had that bottled, but it had been too hot to use as dipping or a coating sauce on its own. Incorporating it into this recipe gave me space in the fridge and a 5 star rating from all 3 of us. The only other thing i changed was my man isn't a rice eater so I spooned his chicken onto a bowl of creamy noodles, he loved it.

I've made this a few times, but it's been a while, so I pulled out the recipe. I used a TJ's smoked paprika and hot chili powder blend and I added granulated onion a few shakes more of cumin and 1/2 tsp cayenne (I like it super spicy!)
Missing some salt - I added 1/2 teaspoon and added the zest of one lime. Dipped in chocolate (dark and white) and decorated with gold and pearl dust along with christmas colored sugars! Pretty cookie and quite fragile!
I'm glad I made this and avoided the instinct to not try it just because of the tomatoes. It definitely all works well together! I did not add the fresh garlic or olive oil and probably wouldn't next time I make this either. Just personal preference.
I wish I had corn in the house when I made this recipe. I think with the corn it would be perfect. Unfortunately, I had none. I did mix in some sweet/hot pepper Jelly rather than more mayo - 1/4 cup wasn't enough to loosen it up enough for me and rather than add more fat, I opted for the sweet heat of the jelly. I didn't have 8 jalapenos on hand either, I had half that amount. I think it was perfect with just 4, with 8 it would have had too much pepper to cheesy goodness ratio.
subbed sour cream for heavy cream, added some fresh chopped dill, and used roasted pine nuts in place of almonds. A great base to adust to your flavoring and needs!
We aren't huge on cake eating here so I like to take cake recipes and make cupcakes - we like them much better! That was what I did to this recipe. I did cut the recipe in half and made a few changes. It sounds like from the reviews this recipe is pretty good to start so because I did make it with some changes I am giving it a rating of 4. I reduced the amount of allspice and cloves. The amount just seemed too much for our preference. I also made my own buttermilk with sour cream, apple cider vinegar and a little bit of almond milk. To frost I made a blackberry buttercream by adding blackberry jam to the buttercream I was making. Turned out pretty good - and I will definitely be sharing at the office tomorrow!
