This time I forgot to put the crushed Oreos in the center, but I still think it turned out great! I used fresh plums, roughly chopped with the skins on. I put the plums and sugar in the mixer first to get the plums nice and juicy. I also added a little salt. The bread turned out really delicious! I enjoyed having chunks of plum throughout the bread. I added chocolate chips, but for everything else I followed the recipe. I love that it doesn't use eggs so my 3 year old daughter can help with every step. This is definitely not a substitute for an actual birthday cake, but if you're just craving a sweet treat you can't beat the ease of this recipe! I used butter instead of shortening, subbed half the white sugar for brown sugar, added a teaspoon of pumpkin pie spice, and omitted the chocolate chips. I used a 2 tablespoon cookie scoop and was able to make 48 cookies easily. 15 minutes in a 350 degree oven was perfect. When I tried them, they were good, but needed some more sweetness so I put a powdered sugar glaze on them with vanilla and pumpkin pie spice. They taste like a glazed pumpkin doughnut! Next time I'll try them with the chocolate chips and maybe some toasted pecans. Helpful (0) Best Zucchini Bread 09/05/2016 I consider myself to be a good baker, but this turned out very dense and dry. Maybe I did something wrong, but I can't think of anything. The cooks illustrated recipe is way better. Helpful (0)
