Gluten and Lactose Free Cream of Broccoli Soup

While making changes to recipes to help with a few family members with food allergies and medical issues that require no gluten, lactose or soy. I converted my own recipe to suit their needs.

Ingredients

  • 1/2 cup lactose free butter replacement, such as Earth Balance or Ghee

  • 1 medium onion, chopped

  • 1/2 cup gluten free flour mix

  • 1 tsp salt

  • 1/2 tsp ground black pepper

  • 2 1/2 cups chicken broth or stock

  • 2 (10oz) pkg frozen chopped broccoli, thawed & drained

  • 2 cups Lactose Free Milk

  • salt & black pepper

Directions

  1. In a large saucepan, melt butter and sauté onions until golden 5-7 minutes.

  2. Blend GF flour mix, salt and pepper together in a little bowl. Sprinkle over sautéed onions and stir well until butter and onions are absorbed.

  3. As your stirring and gradually add chicken broth to maintain smooth consistent rue development.

  4. Once all chicken broth as been incorporated, add broccoli. Bring to a boil, stirring frequently. Cover and turn temp down to a simmer for at least 10-15 minutes. Or until broccoli is tender. Remove from stove.

  5. In small batches, remove 1/2 the batch of broccoli into a blender and puree until smooth. Add the pureed broccoli mixture back into the sauce pan with the rest of the batch. Stir and add milk. Heat thoroughly taste & season with salt & pepper to your liking.

Cook’s Note

  • ***Note: You can interchange different frozen vegetables , however if you use frozen peas, it changes the flavor to more of a sweetness and isn't recommend.***Note: you can easily change this to a completely Vegan or Vegetarian soup by replacing the chicken broth to a Vegetable Broth or a Vegetarian Chicken Broth alternative. And replacing the milk to a non-dairy alternative that suits your dietary needs.
