I also started adding one 19 oz. can of drained and rinsed chickpeas to make it thicker. I like to freeze it in two cup ziplock round containers and zap it in microwave. Fresh rhubarb was out of season, so I used frozen rhubarb. Unfortunately, even with a careful eye, the frozen rhubarb cooked down to more of a paste. This still had great flavor and I would like to make it again when fresh rhubarb is available. As a short cut, I purchased roasted sliced almonds in the produce section, so I skipped the first step. Don't skip the cayenne pepper. It really makes this dish. Helpful (0) Traditional British Fish Pie 08/27/2024 I've never had fish pie, so wasn't sure what to expect but this recipe delivers excellent results and it's very easy to make too! I had leftover mashed potatoes that I used for the topping, so it came together very quickly for me. I think if you wanted a shortcut, and didn't have leftover potatoes, any of the premade grocery store mashed potatoes would work well in this recipe too. I omitted the eggs this time, but might try them when I make it again. The sauce part (bottom) of the pie came out pretty thick, I might decrease the flour a bit next time too, to keep it a bit more fluid. But this pie/casserole is really delicious and a keeper for sure! Helpful (2) Bara Brith 08/27/2024 This is delicious. I wasn't sure what to expect, having never had this Welsh favorite before but I was pleasantly surprised. Great flavor and easy preparation. I couldn't find demerara sugar, so I used dark brown sugar as a substitute and it worked well. Next time I may add cinnamon and nutmeg or experiment with different flavored teas. A keeper! Helpful (0) Chicken Sotanghon 08/26/2024 This soup was easy to make. I couldn't find achiote powder or annatto in my stores, so I used Goya Seasoning with cumin and annatto (giving this soup a distinct flavor and color.) I found the bean thread noodles at the Asian specialty store. The recipe calls for chicken drumsticks, but I think if I made it again, I would use chicken thighs as they have more meat and are easier to to pull the meat from. I will add shredded carrots and ginger as others have suggested next time. If you are looking for something a little different, this recipe is worth giving a try. Helpful (0) Amazing Passover Chocolate Toffee Matzo 08/26/2024 Delicious. Like others have mentioned, no need to melt the chocolate separate. Just sprinkle chips onto the toffee once you take it out of the oven and let it sit for 10 minutes or until the chips are soft enough to gently spread with a spatula. Helpful (0) Pressure Cooker Beef Stew 08/23/2024 This is a perfectly acceptable beef stew that does cook up very nice with very tender beef in a fraction of the time it would take to cook on the stove top, but it is very basic so it's perfect for those that like simple. I did not cook this in a traditional pressure cooker as the recipe is written, but cooked it in my Instant Pot Pressure cooker. Here's what I did: I seasoned the beef with salt and pepper and browned the beef on sauté. Added the liquid (I used Better than Bouillon mixed into warm water) and scraped the bottom of the pan, then added the vegetables (potatoes, carrots, and onions) and cooked on HIGH pressure for 30 minutes with a 10 minute natural release followed by a quick release. I did not cook the potatoes separately as this recipe was written. I added them with the carrots and onions. The vegetables and the meat were perfect and the potatoes still kept their shape. The end result was a bit bland for my tastes. I think the broth could benefit from a bit of tomato paste, garlic, bay leaf, and/or thyme, fresh ground black pepper and some fresh parsley at the end or as a garnish. Helpful (2)
