Chumbo! A Chili & Gumbo Hybrid

We love chili, we love gumbo, put them both together and KAPOW, you've got Chumbo! Serving suggestions: cooked rice, cornbread, shredded cheese, cilantro, Fritos, or whatever chili garnishes you prefer.

Ingredients

  • 1 TB vegetable oil

  • 1/2 med. onion, chopped

  • 3 stalks celery, chopped

  • 1/2 green bell pepper, chopped

  • 2 garlic cloves, minced

  • 1/2 lb. smoked sausage, cut into bite-size pieces

  • 1 c. cooked, chopped chicken -or- 1 12.5 can chunk chicken, drained

  • 1 15 oz. can black beans, rinsed and drained

  • 1 14 oz. can Rotel tomatoes

  • 2 8 oz. cans tomato sauce

  • 1 tsp. Cajun Seasoning, such as Tony Cacheres

  • 3/4 tsp. chili powder

  • 1/4 tsp. crushed red pepper flakes

  • 1/4 tsp. garlic powder

  • 1/4 tsp. cumin

  • 1/4 tsp. dry parsley

  • 1/4 tsp. oregano

  • 1/4 tsp. salt

  • 1/8 tsp. black pepper

Directions

  1. Heat oil in Dutch oven over medium heat, and stir in celery, onion and bell pepper, til soft, around 5 min. Add garlic, 2 more min.

  2. Add sausage and cook til slightly browned. Add remaining ingredients, bring to boil then reduce to simmer and cover for 1+ hrs.
