Ingredients

1 TB vegetable oil

1/2 med. onion, chopped

3 stalks celery, chopped

1/2 green bell pepper, chopped

2 garlic cloves, minced

1/2 lb. smoked sausage, cut into bite-size pieces

1 c. cooked, chopped chicken -or- 1 12.5 can chunk chicken, drained

1 15 oz. can black beans, rinsed and drained

1 14 oz. can Rotel tomatoes

2 8 oz. cans tomato sauce

1 tsp. Cajun Seasoning, such as Tony Cacheres

3/4 tsp. chili powder
-
1/4 tsp. crushed red pepper flakes

1/4 tsp. garlic powder

1/4 tsp. cumin
-
1/4 tsp. dry parsley

1/4 tsp. oregano
-
1/4 tsp. salt

1/8 tsp. black pepper
Directions

Heat oil in Dutch oven over medium heat, and stir in celery, onion and bell pepper, til soft, around 5 min. Add garlic, 2 more min.

Add sausage and cook til slightly browned. Add remaining ingredients, bring to boil then reduce to simmer and cover for 1+ hrs.
