Ingredients

2 cup unsweetened coconut flakes

1/4 cup almond flour

1 tablespoon vanilla extract

1 tablespoon unsalted butter

4 large egg whites
-
1/4 cup of sweetener ( I used truvia )
Directions

Preheat the oven to 400 degrees and line a cookie sheet with parchment paper

in a bowl mix together coconut flakes, almond flour, vanilla extract and butter

in a separate bowl beat together egg whites and your sweetener until stiff peaks form

fold the egg whites into the almond flour mixture
-
spoon the mixture onto the cookie sheet to get 8 - 10 scoops
-
bake for 12 - 14 minutes
