This hit every mark. I was hoping that it was going to be reminiscent of miso salmon that I used to have at a very distinctive Japanese restaurant, many years ago; this recipe came through like dejavu.

*added 1/2c. whole milk *cut amount of cheese in half *used whole wheat breadcrumbs instead of croutons *used whole wheat egg noodles *added fresh chopped onion and garlic *added curry powder

I was pleasantly surprised by how well it turned out. I subbed brown rice for white, doubled the recipe, and added 1/2 tsp chipotle and 3 diced fresh tomatoes.

I added crushed red pepper and instant brown rice. It came out spicier and more like a stew than a soup, but otherwise followed the recipe to a tee and it's delicious! I'll be sure to make this again when I'm entertaining vegan friends.
