This was outstanding! I will make it again and again! I made a few tweaks to the recipe. Iadded a teaspoon of curry powder and a pinch of cayenne to the spice mix. I wanted more substance, so after the paste was created, I added two diced carrots cooking for about 1 minute. I would have added cauliflower too if I had some on hand. Next I added the entire can of tomatoes, but only 2/3 can of the unsweetened coconut milk. While that simmered, I seared some scallops in another pan. Before adding the scallops to the curry, I stirred in two handfuls of torn spinach.
Chef John hits another home run! Delicious and foolproof! I followed the recipe as stated, but omitted the meat, because I’m the Heidi Fleiss of my Kimchi Fried Rice (if you know, you know).
Outstanding! Definitely a 10/10! I made a few small tweaks based on what I had on hand. I used hot Italian sausage and added one minced onion with the garlic. I didn’t have Italian stewed tomatoes, so I used a can of diced tomatoes plus a teaspoon(ish) of Italian seasoning. This will be a fall & winter staple in our hone.
Make this! So simple and delicious! I followed the recipe with the exception of substituting Cuties for oranges, because that’s what I had. I finished by topping with broccoli micro greens which complemented this fresh meal perfectly. When I make this for my family, I will serve it with rice. Would pair nicely with Sauvignon Blanc.
