1 Cup Couscous

1 1/2 Cups shredded Chicken

2 green onions, thinly sliced

1 tomato, cored and chopped

1/2 medium cucumber, peeled & chopped

6 Tbsp olive oil vinaigrette dressing

2 Tbsp crumbled feta cheese
Directions

Bring broth to a boil in a medium pot; add couscous and stir. Remove from heat; cover and let stand 5 minutes. Fluff couscous with a fork, transfer to a large bowl, and cool slightly. Add chicken, green onion, tomato, cucumber, dressing, and feta cheese to bowl, tossing to combine. Divide salad evenly among four bowls.
