Ingredients

Original recipe (1X) yields 4 servings

  • 1 (9 ounce) package cheese-filled tortellini

  • 2 cups cherry tomatoes, halved

  • 1 (10 ounce) package frozen chopped spinach, thawed and drained

  • cup grated Parmesan cheese

  • 1 (2 ounce) can sliced black olives

  • 1 (8 ounce) bottle Italian-style salad dressing

  • salt and ground black pepper to taste

Directions

  1. Fill a large pot with lightly salted water and bring to a rolling boil; stir in tortellini and return to a boil. Cook uncovered, until tortellini float to the top and the filling is hot, about 3 minutes. Rinse under cold water; drain.

  2. Combine tortellini, tomatoes, spinach, cheese, and olives; add enough salad dressing to coat. Toss; season with salt and black pepper.
