Original recipe (1X) yields 16 servings 1 cup all-purpose flour 1 ½ cups whole wheat flour 1 teaspoon baking soda ¼ teaspoon baking powder 1 tablespoon ground cinnamon 1 teaspoon ground nutmeg ½ teaspoon ground cloves 1 teaspoon salt 6 egg whites ½ cup unsweetened applesauce 1 ½ cups brown sugar 1 cup grated unpeeled zucchini 1 cup grated carrot 2 teaspoons vanilla extract ½ cup raisins ½ cup chopped pecans Directions Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5 inch loaf pan with non-stick spray. Sift together all-purpose flour, whole wheat flour, baking soda, baking powder, cinnamon, nutmeg, cloves, and salt in a large bowl until well blended.
