Original recipe (1X) yields 30 servings 2 ½ cups white sugar 3 cups dark soy sauce ½ cup water ½ star anise pod 2 fresh curry leaves 1 (1 inch) piece fresh ginger root, sliced 4 cloves garlic, minced Directions Heat sugar in a heavy saucepan over medium-low heat until sugar becomes lightly brown. Slowly stir in soy sauce. Once the sugar and soy sauce are combined, stir in the water, star anise, curry leaves, ginger, and garlic. Increase heat and bring to a boil.
