On a quest to get my kids to eat more veggies and not just at dinner time, my recipe for pumpkin French toast has now become a family favorite! Drizzle with maple syrup and sprinkle some confectioners' sugar for fun!

Ingredients

Original recipe (1X) yields 4 servings

  • 4 eggs

  • ¼ cup canned pumpkin purée

  • 1 teaspoon ground cinnamon

  • 1 pinch ground nutmeg

  • 8 slices whole wheat bread

  • 2 teaspoons unsalted butter

Directions

  1. Beat eggs, pumpkin purée, cinnamon, and nutmeg together in a shallow bowl. Dip bread slices into pumpkin mixture until coated on both sides.

  2. Melt 1 teaspoon butter in a large skillet over medium-high heat. Cook 4 bread slices in the skillet until browned on both sides, about 3 minutes per side. Repeat with remaining butter and bread.
