This is a very easy recipe for a delicious low-sodium pot roast. I make it healthier by omitting the onion soup mix, using low-fat and low-sodium cream of mushroom soup, and adding vegetables!

Ingredients

Original recipe (1X) yields 12 servings

  • 2 (10.75 ounce) cans low-fat, low-sodium condensed cream of mushroom soup

  • 1 large onion, chopped

  • 3 pounds chuck roast

  • 2 cups sliced carrots

  • 1 pound small red potatoes

  • ½ pound string beans

  • ¼ cup chopped parsley

Directions

  1. Mix cream of mushroom soup, chopped onion, and chuck roast in a slow cooker.

  2. Cook on Low for 8 to 9 hours or High for 3 to 4 hours. Add carrots, potatoes, string beans, and parsley 1 1/2 hours before pot roast is done.
