Original recipe (1X) yields 6 servings 1 (15 ounce) can black beans, drained and rinsed 1 teaspoon ground cumin 1 teaspoon water 1 mango, peeled and diced 1 cucumber, seeded and diced 1 jalapeno pepper, seeded and diced 2 tablespoons chopped cilantro ½ lime, juiced salt and ground black pepper to taste Directions Place black beans, cumin, and water in a microwave-safe bowl; heat in microwave on high for 1 minute.
