Ingredients

Original recipe (1X) yields 20 servings

  • 1 tablespoon unsalted butter

  • 2 tablespoons olive oil

  • ½ cup chopped onion

  • ¼ cup finely chopped celery

  • ½ teaspoon minced garlic

  • 1 (8 ounce) can tomato sauce

  • 1 (6 ounce) can tomato paste

  • 2 tablespoons grated Parmesan cheese

  • 1 teaspoon ground fennel

  • 1 teaspoon dried basil

  • 1 teaspoon dried oregano

  • ½ teaspoon salt

  • ½ teaspoon white sugar

  • ¼ teaspoon ground black pepper

  • 1 large bay leaf

Directions

  1. Melt butter with oil in a large skillet over medium heat. Add onion, celery, and garlic. Cook until vegetables are soft, 5 to 7 minutes.

  2. Stir tomato sauce and tomato paste into vegetable mixture until combined. Add Parmesan cheese, fennel, basil, oregano, salt, sugar, pepper, and bay leaf. Bring to a simmer, stirring occasionally, about 1 hour. Remove and discard bay leaf before using.
