Ingredients

Original recipe (1X) yields 60 servings

  • 3 ½ cups all-purpose flour

  • 2 ¼ cups white sugar

  • 2 cups pumpkin puree

  • ¼ cup vegetable oil

  • 2 eggs

  • 1 ½ teaspoons baking powder

  • 1 ½ teaspoons baking soda

  • ½ teaspoon ground cinnamon

  • ½ teaspoon vanilla extract

  • ¼ teaspoon ground cloves

  • ¼ teaspoon ground nutmeg

  • ¼ teaspoon dried orange peel

  • 2 cups white chocolate chips

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).

  2. Mix flour, sugar, pumpkin puree, oil, eggs, baking powder, baking soda, cinnamon, vanilla extract, cloves, nutmeg, and orange peel together in a bowl until dough is evenly mixed and sticky; fold in white chocolate chips. Drop dough, about 2 tablespoons per cookie, onto a baking sheet about 2 inches apart.

  3. Bake in the preheated oven until lightly browned, 12 to 15 minutes.
