Original recipe (1X) yields 8 servings 1 tablespoon coconut oil, or more as needed 3 sweet potatoes, cubed 1 sweet onion, chopped 1 sweet apple, chopped 1 clove garlic, minced 1 tablespoon ground cinnamon ¼ teaspoon ground chipotle pepper salt to taste Directions Preheat oven to 400 degrees F (200 degrees C). Spoon coconut oil onto a baking sheet; add sweet potatoes, onion, apple, and garlic. Sprinkle cinnamon, chipotle pepper, and salt over sweet potato mixture.
