½ cup milk

½ cup butter

4 teaspoons cocoa powder

2 teaspoons pure vanilla extract

Directions

Combine sugar, milk, butter, and cocoa powder in a large saucepan over medium heat. Bring to a boil; cook, stirring constantly, until sugar is dissolved completely, 1 1/2 to 2 minutes. Immediately remove saucepan from the heat.

Stir peanut butter and vanilla into milk mixture until smooth. Add oats; stir to coat. Spoon oats mixture onto a sheet of parchment paper; let sit until mixture holds together, about 15 minutes.
Cook’s Note
This type of recipe often has issues with being too dry or with the cookies easily falling apart. That is why it's imperative that you use 1/2 cup milk and no more than the 2 cups oatmeal called for. If you follow these directions to the letter, I think you'll find these cookies to be super moist.
Depending on the amount you spoon out, this recipe will yield approximately 25 to 33 cookies. Smaller is better, though.
