Original recipe (1X) yields 60 servings 3 cups white sugar 2 sticks unsalted butter, at room temperature 2 cups pumpkin puree 2 eggs 2 teaspoons vanilla extract 4 cups all-purpose flour 2 cups quick-cooking oats 2 teaspoons baking powder 2 teaspoons baking soda 2 teaspoons ground cinnamon 1 teaspoon salt 2 cups semisweet chocolate chips Directions Preheat the oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper. Combine sugar and butter in a large mixing bowl. Beat with an electric mixer until creamy. Add pumpkin, eggs, and vanilla extract. Mix flour, oats, baking powder, baking soda, cinnamon, and salt in a separate bowl. Add dry ingredients to the pumpkin mixture; mix until evenly incorporated. Fold in chocolate chips.
