1 (15 ounce) can cream-style corn, drained

1 (15 ounce) can crushed pineapple, drained

2 cups cornmeal

1 cup self-rising flour

1 cup shredded Cheddar cheese

½ cup minced onion

½ cup white sugar

2 eggs, beaten

1 pinch salt and ground black pepper to taste
Directions

Heat oil in a deep fryer or large saucepan to 365 degrees F (185 degrees C).

Mix canned corn, pineapple, cornmeal, flour, Cheddar cheese, onion, sugar, eggs, salt, and pepper together in a large bowl.

Drop as many teaspoonfuls of batter into the hot oil that the pan will allow; cook until golden brown or until they float to the top, about 5 minutes. Drain on a paper towel-lined plate. Repeat with any remaining batter.
Cook's Notes:
For thicker batter, use a little more cornmeal until the batter has the consistency of drop biscuits.
You can use your choice of shredded cheese.
