Ingredients

Original recipe (1X) yields 4 servings

  • 1 pound zucchini

  • ½ cup vegetable oil

  • 3 tablespoons white vinegar

  • 2 tablespoons honey

  • 1 tablespoon chopped fresh parsley, or to taste

  • 1 tablespoon chopped fresh dill, or to taste

  • 1 tablespoon chopped fresh basil, or to taste

  • 3 cloves garlic, minced, or more to taste

  • ½ teaspoon salt

  • ½ teaspoon ground black pepper

Directions

  1. Slice zucchini with a vegetable peeler and place in a large bowl.

  2. To make the marinade: Mix oil, vinegar, honey, parsley, dill, basil, garlic, salt, and pepper together in a separate bowl; pour over zucchini. Cover the bowl and refrigerate for at least 2 hours. Serve cold.
