Gooseberry Sauce

Good for something besides pies or jams. A nice, sharp gooseberry sauce to complement mackerel, salmon, lamb, or pork.

Ingredients

Original recipe (1X) yields 8 servings

  • 2 cups fresh gooseberries

  • 1 medium onion, roughly chopped

  • ½ teaspoon white sugar, or more to taste

  • 1 cup water to cover

Directions

  1. Prepare gooseberries by using scissors to snip each end. Rinse to remove dirt and debris.

  2. Transfer berries to a pot and add onion, sugar, and enough water just to cover. Cover and cook gently over medium heat until soft, 10 to 15 minutes. Taste and adjust level of sweetness. Remove from heat and transfer carefully to the bowl of a food processor or blender.

  3. Puree the mixture. Serve sauce warm or cold.

Cook's Notes:

Add more or less water to adjust sauce consistency for personal preference. Add more sugar if you need it, but do use it sparingly.

You can also add 1 sprig mint or elderflower for aroma or flavor.
