I was looking for healthier ground turkey recipes and came up with this ground turkey soup with rice. I serve this with a fresh French bread. It also freezes really well!

Ingredients

Original recipe (1X) yields 6 servings

  • 1 pound ground turkey

  • 2 tablespoons salted butter, or to taste

  • 2 medium carrots, diced

  • 1 small onion, diced

  • 1 stalk celery, diced

  • 2 cloves garlic, minced

  • 4 cups chicken broth, or more to taste

  • 1 cup 1% milk

  • 1 tablespoon dried parsley

  • 1 tablespoon dried thyme

  • 1 ½ teaspoons ground black pepper

  • 3 ½ cups cooked wild rice

Directions

  1. Heat a large skillet over medium-high heat. Cook and stir ground turkey in the hot skillet until browned and crumbly, 5 to 7 minutes. Remove from the heat. Drain and discard grease.

  2. Melt butter in a skillet over medium heat; stir in carrots, onion, celery, and garlic. Cook and stir until the onion has softened and turned translucent, about 10 minutes.

  3. Add broth, milk, parsley, thyme, and pepper. Stir in turkey and bring to a boil. Reduce heat to medium-low and simmer for 30 minutes. Stir in rice and cook until heated through, about 5 minutes.

Cook's Note:

You can use margarine or a butter substitute in place of butter.
