This easy maple-coconut ice cream recipe is dairy-free and can be prepared with or without an ice cream maker. Use any toppings you like, such as shredded coconut, fruit, chocolate sauce, or nuts.

Ingredients

Original recipe (1X) yields 6 servings

  • 1 (14 ounce) can coconut milk

  • ¼ cup maple syrup, or more to taste

  • 1 teaspoon vanilla extract

  • 1 pinch salt

Directions

  1. Combine coconut milk, maple syrup, vanilla extract, and salt in a blender; blend until smooth. Taste; adjust sweetness.

  2. Pour mixture into an ice cream maker and freeze according to manufacturer's instructions, about 20 minutes. Transfer to an airtight container and freeze until firm, about 6 hours.

Recipe Tip

If you don't have an ice cream maker, transfer coconut mixture into ice cube trays and freeze until solid, about 6 hours. Blend the frozen cubes in a high-speed blender until smooth. Serve as is, or place in the freezer to harden again for about 20 minutes.
