Ingredients

Original recipe (1X) yields 8 servings

  • 3 cups rolled oats

  • 1 cup brown sugar, or to taste

  • 2 teaspoons ground cinnamon

  • 2 teaspoons baking powder

  • 1 teaspoon salt, or to taste

  • 2 large eggs

  • 1 cup milk

  • ½ cup melted butter

  • 2 teaspoons vanilla extract

  • ¾ cup dried cranberries

Directions

  1. Gather all ingredients. Preheat the oven to 350 degrees F (175 degrees C).

  2. Mix together oats, brown sugar, cinnamon, baking powder, and salt in a large bowl.

  3. Beat in eggs, milk, melted butter, and vanilla extract. Stir in dried cranberries.

Cook’s Note

I like this served warm, topped with milk. You can vary the type of fruit each time you make this. Try it with dried blueberries instead of cranberries, or diced apples, pears, or peaches when in season.
