1 quart canola oil for frying

1 (20 ounce) package chocolate sandwich cookies with cream filling

2 cups dry pancake mix

1 cup water

½ cup confectioners' sugar for dusting
Directions

Heat oil in a deep fryer to 375 degrees F (190 degrees C).

Meanwhile, combine pancake mix and water according to package directions.

When oil reaches temperature, dip 4 or 5 cookies at a time into batter; add to oil and fry until golden brown, turning once. Remove from oil using tongs; drain on paper towels. Dust fried cookies with confectioners' sugar; serve.
