Ingredients

Original recipe (1X) yields 24 servings

  • 1 tablespoon flour, for coating

  • 1 (15.25 ounce) package lemon cake mix

  • 1 cup vegetable oil

  • 4 large eggs, beaten

  • 1 (3.4 ounce) package instant vanilla pudding mix

  • 10 fluid ounces Mountain Dew

  • 1 (20 ounce) can crushed pineapple with juice

  • 1 cup white sugar

  • 3 tablespoons cornstarch

  • 1 cup flaked coconut

  • ¼ cup butter

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking dish.

  2. Mix together cake mix, oil, beaten eggs, pudding mix, and Mountain Dew in a large bowl until well combined. Pour into the prepared baking dish.

  3. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 30 to 35 minutes. Allow cake to cool completely on a wire rack.

  4. Combine pineapple with juice, sugar, and cornstarch in a saucepan. Bring to a boil and cook, stirring constantly, until thick. Remove from heat. Stir in coconut and butter. Spread evenly over cooled cake.
