Ingredients

4 limes, divided

1 cup white sugar

1 cup water

2 cups sliced strawberries (about 10 ounces)

1 tablespoon chopped fresh sage

1/2 cup white wine vinegar

1 (2 liter) bottle club soda, chilled

strawberry halves, for garnish
Directions

Zest and juice 2 limes to yield 1 teaspoon zest and 3 tablespoons juice.

For shrub, heat sugar and water in a small saucepan over medium heat, stirring until sugar is dissolved. Add sliced strawberries, sage, and lime zest. Bring to a boil; reduce heat and simmer, covered, 15 minutes. Let cool 10 minutes.

Strain through a fine-mesh sieve into a 24-ounce canning jar or bottle, pressing on solids to remove as much liquid as possible; discard solids. Stir in vinegar and lime juice. Chill at least 4 hours or up to 2 weeks.

Thinly slice remaining 2 limes. For each drink, fill a rocks glass with ice. Add 3 tablespoons (1 1/2 ounces) shrub and 1/2 cup club soda; stir to combine. Garnish with strawberry halves and lime slices.
Make a Big Batch
Fill a pitcher with ice, all of the shrub, and 2 liters of club soda. Stir to combine. Garnish with lime slices and strawberry halves.
