Ingredients

1 Chukar (or 2 quail)

Salt and pepper to taste

1 Tablespoon extra virgin olive oil

1 Tablespoon freshly squeezed orange juice

1 Tablespoon honey

1 Teaspoon minced Garlic

1 Teaspoon ground paprika
Directions

Preheat oven to 500 degrees.

Line aluminum foil into cast-iron skillet, grease aluminum foil with cooking spray. Place bird in skillet, and rub the bird with olive oil, then sprinkle on the salt and pepper over the bird.

Combine orange juice, honey, garlic, and paprika in small dish until well mixed; spoon over bird.

Roast for 30 minutes or until instant read thermometer shows 165 degrees F
