Made as written but did use half butter, half olive oil and did use garlic salt instead of salt as suggested. Very tasty, very easy. My daughter loved it. Served it over rice.
I scaled the recipe down to one serving and used a small skillet, adding about 4 ounces of water. Came together quick and easy. Because the main dish was not finished I did add a bit more cream keeping it warm. Tasty, will likely make again. UPDATE 10/2/15: I made this again and paid attention to the timing and doubled the cream, YUM! Yes, I will be making this often!
Ten star recipe! I made the entire recipe for a Meatless Monday and ate half all by myself! I added 1/4 teaspoon garlic powder and a sliced jalapeno - almost tasted like pizza. . . Highly recommend and WILL make again! Thanks JEZZI16.
I didn't have an apple or the cranberries the first time I made this. . . I added chopped green pepper. Also added a bit of chicken granules and used more pecans. The second time I didn't have a green pepper but did have an apple and cranberries:) Great both ways. I probably used less mayo . . just enough to mix. I realized I prefer chicken shredded better than cubed, and chopped apple better than grated - just me turning picky in my old age. Thank you Rachel, I'll make this again!
