Easy Lemon Cookies.

Just made them! Delish! Substituted cinnaomon apple sauce for vegetable oil. Used lemon zest and juice of 1 lemon. Refridgerated before rolling in sugar to bake. Crisp on the outside, chewy on the inside! Yum!

Scallop-Topped Portabello Mushrooms Recipe.

Followed the recipe as is. Amazing! And presentation was excellent too! Reminded me of Hotate-Hokkaiyaki from Japanese restaurants. Think next time I will add fish roe to give it the crunchiness of Hotate-Hokkaiyaki. =)

Asian Chicken Salad.
This was a great salad! Suggestions from other reviewers: 1. Baked Wonton Wrappers cut into strips, 2. Sesame oil is a must, 3. Added Hoisin Sauce to taste in the dressing. Will make again!

Made as is with few modifications for personal taste: cut down to 1/2 lime juiced, used red onion, used extra cilantro, increased to 3 roma tomatoes, used extra garlic, and covered top with cayenne pepper to taste ... YUM! Perfect blend of taste and textures! I've made this countless times and always loved!

Marinated Grilled Shrimp.

Wished I took a picture before I devoured the dish! Followed recipe with some additions. Used about 20 frozen, tail-on, shrimp. Sauce additions: 1 cup of Red Pack diced tomatoes seasoned with garlic and basil (in place of tomato sauce), dash of red pepper flakes, 1/4 cup sweet chili sauce (buy in Asian markets), extra minced garlic and basil to own liking. Marinated in sauce for 30 mins in fridge. Grilled on grill pan on stove top, lightly greased pan with olive oil. Cooked and removed shrimp as directed. Brought marinade to boil, adding 1/4 cup of chopped parsley. Served over pasta w/ organic vodka sauce (Trader Joe's). Smelled and tasted great!

Alterations: Doubled the sauces and changed soy to balsamic ratio to 1 soy to 2 balsamic. Cut the butter down to reduce the fat too. Yummy!
