I recommend using a mixer for sure. I used 8 oz of block Parmesan cheese instead of 6 oz to increase flavor and because block Parmesan cheese is sold in 8 oz, not 6 oz. I used a nutribullet to turn the cheese into a flour to make it easier to mix with the tapioca flour (aka tapioca starch) as shredded cheese doesn't mix as well. I used Bob's Red Mill brand tapioca flour. I use 1 and a half tablespoons almond extract, otherwise the almond flavoring is too overpowering.
