1 1/4 cup almond meal

1/3 cup raisins

1/3 cup "Enjoy Life" chocolate chips

1/4 shredded unsweetened coconut

2 Tbsps sunflower seeds

1/4 cup honey

3 Tbsps coconut oil, melted
Directions

Combine all dry ingredients in a bowl. Mix. Add melted coconut oil and liquid honey. Combine well. Scoop out tablespoonfuls and put on ungreased cookie sheet, pressing the scooops down slightly. Bake in 350 degree oven for 8=9-10 minutes or until edges are golden. Let rest ?cool down before enjoying. Makes 15 cookies.
Cook’s Note
- Variations: use other dried fruits or nuts in place of the chocolate and the raisins.
