Paleo Trail Mix Cookies

This is my favorite Paleo cookie recipe. It is so easy and tasty that everyone likes it, even if not following the Paleo "diet". No refined ingredients and a very satisfying flavor and texture!

Ingredients

  • 1 1/4 cup almond meal

  • 1/3 cup raisins

  • 1/3 cup "Enjoy Life" chocolate chips

  • 1/4 shredded unsweetened coconut

  • 2 Tbsps sunflower seeds

  • 1/4 cup honey

  • 3 Tbsps coconut oil, melted

Directions

  1. Combine all dry ingredients in a bowl. Mix. Add melted coconut oil and liquid honey. Combine well. Scoop out tablespoonfuls and put on ungreased cookie sheet, pressing the scooops down slightly. Bake in 350 degree oven for 8=9-10 minutes or until edges are golden. Let rest ?cool down before enjoying. Makes 15 cookies.

Cook’s Note

  • Variations: use other dried fruits or nuts in place of the chocolate and the raisins.
