Slow Cooker Mexican Stewed Beef

Looking for something different from your regular taco night routine? This slow simmered beef makes a delicious taco or burrito filling for your Mexican dinner night. You can use this as your taco filling, burrito filling, tostada topper, etc., and by adding your favorite topping like fresh cut cilantro, sour cream, or home made salsa you can make something amazing even more so. The possibilities are endless. The Herdez cooking sauce makes this super easy and delicious too.

Ingredients

  • 3 lbs beef roast

  • 4 to 6 cloves of garlic (peeled)

  • 1 medium onion sliced into strips

  • 1 bottle Herdez Red Guajillo Chili Mexican Cooking Sauce

  • 1/2 cup to 1 cup of water

  • salt to taste

Directions

  1. Take a sharp knife and slice little pockets in the beef roast for your garlic cloves. Stuff little pockets with your garlic cloves. Take onion slices and arrange along the bottom of your slow cooker. Place roast on top of onion and pour Herdez cooking sauce over roast. Add water until roast is barely covered in water. Salt to taste.

  2. Cook on low for 8 to 10 hours or until cooked and falling apart. Shred meat before serving.

Cook’s Note

  • You can wait to add salt until cooked. The sauce is very flavorful by itself, but it depends on person to person. That way you can taste and add as needed.
