The oil had me worried. No problem. Skimmed about 1/4 cup off before serving. This recipe was worth every stir, every delicious smell and the wait. Served over white rice. Perfect Fat Tuesday choice. One of the best dishes I have made, and I have made plenty. So satisfied right now.
I baked the bread 5 minutes, then turned over and baked another 2 minutes. Topped with the tomato mixture and a few more sprinkles of cheese. Baked 2 more minutes. Pretty good.
I only made 1/4 the recipe so had to adjust the ingredients accordingly . Loved the pecans. This is a very good chicken salad.
