Among my Costco must-buys on nearly every trip are Kirkland coffee beans, olive oil, and copious cans of seltzer water. But part of the joy of shopping at Costco is the unexpected finds that aren’t always available, especially in the bakery section. After a fall filled with pumpkin-flavored goodies and the new croissant bread fans have been buying up, we were intrigued to see the latest bakery addition people on social media are raving about. Costco's New Almond Florentine Cookies Costco recently released new almond florentines with chocolate drizzle. Instagram's Costco fan account Costcoguide said that the cookies are chewy and crunchy and some of the “best cookies I’ve ever tried.” What Are Florentine Cookies? Florentine cookies are thin, lacy cookies made with a nutty base. They’re often made with almonds, as they are in the Costco version. And while you sometimes may see them called “lace cookies,” that’s a descriptor of a whole genre of cookies featuring this delicate, crisp texture. While their name implies an Italian heritage, some believe these cookies have roots in Austria or France. Whether or not you were already familiar with them, the Costco version seems to be a hit. On a Reddit thread discussing the cookie, commenters said, “I could eat a whole container in one sitting.” Some commenters reported that the cookies were softer and chewier than they expected of a Florentine cookie. While some people thought that was a negative, others still thought the cookie was worth buying even if it was softer. The cookies are selling for about $9 for a pack of 16 cookies.
